A must try is the Beet Soup with Crunchy Bacon. It’s absolutely delicious, and will make a beet lover out of even those who say they detest beets (brought on by memories of the canned ones that their mothers served). With oven baked bacon as a garnish, a truly delicate beet flavor really shines through. The cumin is a nice counterpoint that stays in the background. The soup is also a beautiful magenta color and looks amazing against whatever color bowl you serve it in, even glass, and would make a wonderful presentation at a dinner party. Other winners are the Texas Turkey Meatloaf (Chef Alain now lives in Austin TX), Mushroom Soup (with bacon, sense a pattern here?) and the Warm Moroccan Carrots.
