Alain explains the aspects of celiac disease, what it is, how to manage it, and gives a lot of details on how to travel, live healthfully, and some of the topics many books don’t cover – how to cope. Many just starting out with a gluten-free or dairy-free diet feel they have few choices – either feel deprived, or live with inferior store-bought “substitute” products. Alain explains that there is a third option, and he offers up some delicious French recipes to get you started. French recipes? (Aren’t most French recipes comprised of bread and cheese – and wine? How is this accomplished on a gluten and dairy-free diet?) Alain shows that even gluten and dairy-free French dishes can be delectable.

Alain Braux is a classically trained French Chef as well as a Macrobiotic Chef and a Nutritherapist (whatever that means. Alain’s note: see my web site for an explanation). More to the point, he makes sense and that’s all you have to know. America does so many great things, but our food culture is somewhat in shambles. We enjoy some of the best medical care in the world, but we might be the unhealthiest nation on the planet. Fast Foods are no longer fast enough and we are so busy being busy that we don’t take the time to enjoy life’s simple (and most important) pleasures. His book includes simple recipes that combine real food that is both healthy and delicious. Chef Braux resides and works in Austin, Texas.

A careful reading of the recipes reveal Alain, the Nutritherapist, at work in the kitchen with the respect he has for the healing power of the ingredients and the care with which they are combined. So then the dilemma: which one to prepare first. There are so many enticing recipes calling my name. But we definitely chose the crepes upon finding all required ingredients were in the house (too often the defining criteria).
