Anna McNair Gluten-Free Story. 3/16/2010
No more bread rolls, no more pizza; no more fruit loops or cheerios. Say goodbye to birthday cake and brownies, donuts, cookies, and macaroni.
That was me two years ago, after a revealing visit with the nutritionist. I am a senior in high school and have been living with type 1 diabetes since December of eighth grade. The diagnosis led me to seek nutritional counseling to learn how to optimize my health. The doctor explained that eliminating gluten from my diet was essential to obtaining my goal. Gluten hides in the majority of our foods, a Trojan horse silently waiting to attack the digestive systems, immune systems, and neurological functioning of an enormous percentage of Americans. Found in many foods, gluten has a wide range of adverse effects on the human body.
Realizing the necessary steps I needed to take to get my body as efficient as possible, my mom and I cleaned out our pantry and re-stocked it from scratch. Not only were we lacking comestibles for our pantry, my mom was in need of gluten-free recipes. A friend recommended People’s Pharmacy for advice, and that is where we met Alain, the most creative gluten-free chef I have ever tasted! Alain came to my family’s rescue. He cured our fear of this new gluten-free diet and gave us the confidence to take on the grocery store with gusto, not to mention, indulge in some of the finest gluten-free foods our mouths have ever had the pleasure of tasting.
