Lemon Coconut Rounds

This recipe is Vegetarian, Paleo and Gluten-free
Lemon Coconut Rounds make for a sweet after-dinner indulgence, or a small treat to be shared at an intimate gathering. They’re quick to assemble – ready in less than 30 minutes – and naturally sweetened with a small amount of honey and lemon. These rounds are best served chilled and shared!
Ingredients
1 cup cashews
1 cup shredded coconut
1/2 tsp salt
1 lemon, juice and zest
2 TBSP honey
2 TBSP coconut oil
1 tsp vanilla
1/4 cup shredded coconut for rolling, in small bowl
Procedure
1. Place the cashews, shredded coconut and salt in a high-powered blender. Blend until the cashews and coconut are finely ground.
2. Add the remaining ingredients (except for the 1/4 cup shredded coconut for rolling) into the blender and blend until smooth.
3. Remove from the blender. Roll into small balls, then dip and fully coat in shredded coconut. Place the rounds on a plate and refrigerate for 10-20 minutes, or until firm.
