Congratulations to Tony and Chef James for a tongs-licking great guide to cooking with fire.
This treatise on ancient cooking techniques sets out to teach us how to cook quality meats, fresh veggies and even fruits with the magic of live fire. I felt like a boy scout all over again.
Being an food history fan and curious about the origins of Paleo food. it was a pleasure to read “the History of Meat and Fire” It was a fascinating trip into to minds of our ancestors and how they came to discover and tame fire to their benefit.
These two gentlemen cover all the important steps of this ancient form of cooking. They walk you through all the essentials of this ancestral cooking technique adapted to modern times. After the history of Paleo food, they invite you to “Meet your Meat”, how to pick your cooking equipment and medium – grill types, how to start your grill and how to start your coals without the use of dangerous and toxic fire starter. In other words they guide you from “soup to nuts” literally.
Paleo Grilling offers about 100 of the tastiest and easy to do Paleo recipes. You may sweat in front of your grill but you will never sweat for lack of recipes.
Then Tony and James get us started with recipes for rubs, condiments, spice blends, sauce, marinades and dips. We then move on the the meat of the subject with a tasty assortment of animals: beef (of course), bison, pork, lamb, chicken, seafood and for the real hunter out there, wild game like wild board, venison, rabbit, quail and even (for y’all that live in the swamps) gator tail. Are you an offal fan? For your pleasure, you will find ways to cook heart, liver and sweetbreads.
Finally but very important for that sweet tooth of yours, let’s not forget Paleo dessert. Can you believe they have a Paleo Key Lime Pie (my favorite) as well as grilled peach with coconut ice cream (yum!)
