Chef Alain’s Weekly Recipe
Zucchini Chickpea Fritters
[Vegan, Gluten-Free] Adapted by Chef Alain Braux
Servings: 6
Ingredients
1 large/2 medium zucchini – grated
1 can chickpeas (rinsed, sautéed for 5 min in a pan and then mashed with potato masher.)
2 Tbsp chickpea flour
2 Tbsp brown rice flour (more if it feels watery)
1 Tbsp nutritional yeast
Sea salt – to taste
1 tsp chili powder, or to taste
½ tsp ground paprika, or to taste
1 clove garlic, chopped finely
1/4 red onion, peeled and chopped finely
Coconut oil – for pan frying
Parsley for decoration
Procedure
1. Add salt to grated zucchini-toss them well. Let sit for 10-15 min. Squeeze the water out and add them to a mixing bowl.
2. Drain chickpeas and mash them.
3. Add mashed chickpeas, chickpea flour, brown rice flour, nutritional yeast, paprika, garlic, onion and mix them all with a wooden spoon. Make them firm enough to be rolled easily.
4. Roll into balls, then form patties. Dust your hands with rice flour if needed.
5. Heat you pan on medium heat. Add coconut oil as needed and pan sauté your patties.
6. Dry on paper towels. Sprinkle with chopped parsley or whole parley leaves. Enjoy!
